Vegan Red Kidney Bean Stuffed Peppers in a Tagine

 

Happy Meatless Monday! Make this Indigenous Cuisine inspired vegan stuffed peppers utilizing all the spices traditionally used with ground meat recipes. I added my new favorite grain, kasha to this mixture that provides the perfect combination of complete proteins to get your body the essential nutrients it needs, craves, and wants- minus all the animals. Treat yourself to a great healthy start to the week!

 

Vegan Red Kidney Bean Stuffed Peppers in a Tagine

Ingredients

2 cups red kidney beans, cooked

1 cup corn kernels, cooked

1 cup kasha, cooked

1 small onion

1 cup fresh parsley

4 medium peppers

4 small tomatillos

1 roma tomato

2 jalapeno

1 teaspoon garlic ground

1 tablespoon paprika

1 teaspoon cumin ground

salt

pepper

 

 

Directions

Combine red kidney beans and parsley with paprika, salt, and garlic powder. Pulse for 30 seconds until mixture is coarsely chopped; transfer to a bowl; add kasha, corn, and toss together.

Using the same processor, combine tomatillos, roma tomato, onion, jalapeno, garlic powder, salt, and pepper. Process for about 1 minute on high speed.

Slice pepper tops off leaving about ½ inch. Remove the seeds and discard. Add stuffing mixture and press firmly down midway through. Pour tomato mixture into tagine or baking tray and cover peppers with tops. Cover the tagine with lid or baking tray with foil and bake in the oven for about 2 hours. Remove from oven and divide into four bowls. Serve immediately!

Pimms Cup Cocktail Recipe

Are you planning a Weekend Social? Or a nice picnic style outdoor brunch,, a polo game? I sampled this cocktail for the first time a few years ago at a polo launch party at Alton Lane. My friend, who’s a fabulous producer Matt Paco invited me to his friends store where they were celebrating another year of polo. I don’t play or ride horses, but I sure do admire drawing them. And I have a soft spot for preppy boys.

I had crushes on so many during my teenage years- until I went to art school and I started liking artsy types. There’s a classic allure to a man wearing a felt 150% wool blazer, pink chinos, and pocket square. If he knows about the arts and fashion, and food…I’m all ears.

Muddled Strawberry Pimms Cup Recipe

INGREDIENTS

Yields 4 Cocktails

  • 1 1/2 cups Pimm’s No. 1
  • 8-10 mint leaves
  • 1 lemon, cut crosswise into thin slices
  • 3/4 cup muddled fresh strawberries
  • 1 1/2 cups cold ginger ale or lemon lime soda
  • 1 strawberry, stem removed
  • About 3 cups ice
How to make this recipe
  1. In a large pitcher, combine the Pimm’s, the strawberry and lemon juice, and mint. Chill for about 10 minutes. Stir in the ginger ale.
  2. Prepare four 1-pint glasses. Fill halfway with ice. Pour in the Pimm’s mixture.
